چکیده

This study investigates the influence of polyol compounds (sorbitol and erythritol) on osmotic dehydration process pomegranate seeds. The efficacy was estimated based determination water loss, weight reduction, solid gain, effective diffusivity also through a comparison results obtained between sucrose solutions. Response surface methodology used to optimize process. Quality attributes seeds were determined assessment physical (texture color) characteristics. innovative research applies alternative solutions in process, which until now, have not been commonly processing by researchers worldwide. Results revealed excellent correlation experimental values with model. Erythritol sorbitol exhibit stronger efficiency than sucrose. However, erythritol satisfactory due high gain. Therefore, agent seems be most suitable for optimal condition maximum loss (38.61%), reduction (37.77%), (4.01 × 10−8 m2/s) minimum gain (−0.37%) 13.03 min, 27.77 °Brix, 37.7 °C, using solution. texture color major impact agents seed characteristics during

Efficiency of Osmotic Dehydration of Apples in Polyols Solutions.

The present study aimed to evaluate the influence of selected compounds from the polyol group, as well as other saccharides, on the osmotic dehydration process of apples. The following alternative solutions were examined: erythritol, xylitol, maltitol, inulin and oligofructose. Efficiency of the osmotic dehydration process was evaluated based on the kinetics of the process, and through comparis...

modeling and optimization of ultrasound assisted osmotic dehydration of cranberry using response surface methodology

in this study, we investigated the effects of osmotic process with or without ultrasound on solid gain (sg) and water loss (wl) of cranberries. response surface methodology was used to model and determine the optimum processing conditions for wl and sg during osmotic dehydration of samples. sucrose (40-60%) and salt (0-8%) concentrations, temperature (30-50°c) and frequency of ultrasound (0-130...

assessment of the efficiency of s.p.g.c refineries using network dea

data envelopment analysis (dea) is a powerful tool for measuring relative efficiency of organizational units referred to as decision making units (dmus). in most cases dmus have network structures with internal linking activities. traditional dea models, however, consider dmus as black boxes with no regard to their linking activities and therefore do not provide decision makers with the reasons...

neuro-fuzzy and response surface modeling of osmotic dehydration of pomegranate arils

in this research, pomegranate arils are dehydrated by osmotic dehydration in 40, 50, and 60 % sucrose ‎solutions and at 45, 55 and 65 degrees c‎‏ ‏‎ and weight reduction, solids grain and water loss of the products ‎were measured at 60, 120 and 180 minutes of process. osmotic dehydration processes was modeled by ‎combination of neural network and fuzzy logic techniques (neuro-fuzzy) and respons...
